Does anyone know how this is going to work this year? I know that we won't be using SOLAR, but I don't understand anything about Mosaic :/ Can someone point me in the right direction

How do you "know" that you won't be using SOLAR?
The most recently updated launch date for the use of Mosaic for student registration is March 2015. You're going to want to register for courses much sooner than that

This year you will be using SOLAR. Nothing changes.

MOSAIC course registration won't be out till next year.
